Traditional Balsamic Vinegar ('aceto balsamico tradizionale') is one of Italy's most extraordinary artisan products. A small bottle of 25-year-old balsamico costs €80–150 and is used in drops, not tablespoons. Most 'balsamic vinegar' sold globally is a mass-produced imitation — a condimento of grape must and wine vinegar, not the genuine article.
