SEH-teh
In Italian, thirst and hunger are expressed with the verb avere (to have): 'ho sete' (I am thirsty, literally 'I have thirst'); 'ho fame' (I am hungry). Not 'sono assetato', which is more literary.
Ho tanta sete dopo aver giocato a calcio.
I am very thirsty after playing football.
Bevi qualcosa — devi avere sete con questo caldo!
Drink something — you must be thirsty in this heat!
