The Story Behind It

Risotto alla milanese is the culinary identity of the city: short-grain rice (Carnaroli or Vialone Nano from the Lombard paddy fields), saffron from the Abruzzo trade, bone marrow from the veal, white wine, and a slow, patient stirring over heat for eighteen to twenty minutes. There is no shortcut: add too much liquid at once and the rice becomes stodgy; rush the stirring and the starch fails to release; cook too fast and the rice grain remains hard at the centre. Milanese cooks have always known this, and the lesson migrated naturally from the kitchen to the workshop, the counting house, and the design studio. The proverb is invoked whenever someone is trying to accelerate a process that fundamentally cannot be accelerated — a business relationship, a design process, a legal negotiation, a fermentation.
