Nel vino la verità, nell'acqua la salute

In wine there is truth, in water there is health — wine loosens the tongue and reveals what people really think, while water keeps the body sound. The proverb is used with irony to justify the pleasure of wine while conceding, reluctantly, the benefits of temperance.

The Story Behind It

Tuscany gave Italy several of its greatest wines, and the culture of wine permeates every level of Tuscan social life from the simple fiasco of Chianti on a farmhouse table to the treasured Brunello in a Montalcino cellar. Yet Tuscans also had a clear-eyed understanding of wine's power to dissolve restraint and reveal truths that sober conversation would never produce. The Florentine humanists of the fifteenth century famously held their philosophical discussions in garden settings where wine flowed alongside ideas, and the idea that wine unlocked authentic speech was treated not as a moral danger but as a social gift. The contrast with water — healthful but colourless and silent — was understood as a gentle joke: of course water is good for you, but who ever told an interesting truth while drinking water? The Tuscan form of this Latin tag acquired its own regional flavour, often used at the dinner table as both a toast and a philosophical observation, confirming the Tuscan tendency to dress everyday moments in a light coat of irony.

An adaptation of the Latin in vino veritas, the Tuscan form adds the counterbalancing phrase about water, reflecting both the centrality of wine in Tuscan culture and the characteristic Tuscan irony about its effects.
