Colonnata, a hamlet above Carrara in Tuscany, is famous for its lardo — cured pork lard aged in marble basins with herbs and spices. The marble is quarried nearby. Colonnata lardo is an IGP product and one of Italy's most unusual and extraordinary cured meats. It is almost impossible to find outside Tuscany.
